The only dish that I prefer with the Beets is the Beetroot Halwa. My opinion previously was that veggies & fruits that are sweet tasting should be made as desserts. Amma used to make poriyal, chutney and few others but my opinion remained. My whole conception changed when Athai made Beetroot Milagu Varuval. The beets are overpowered by pepper and mildly flavored with garlic~very simple ingredients that swayed my opinion. Do give it a try if you are in the same opinion as I was. I do admit that the Halwa remains the best.

Cook time: 25 minutes
Spice Level: Medium 
Recipe Level: Intermediate
Serves: 4


Ingredients:
  1. 4 cups Beetroot sliced
  2. 2 teaspoon pepper powder
  3. 1 teaspoon coriander powder
  4. 1 tablespoon finely chopped garlic
  5. ½ teaspoon salt (requires less salt)
  6. few curry leaves
  7. 2 tablespoon oil

Procedure:
  1. Wash the beetroots well and pressure cook ( 3 whistles) along with the skin. When cool, peel the skin and slice into bites size pieces. Set aside.
  2. Heat oil in a kadai/pan and add garlic and curry leaves and saute for a minute.
  3. Now add the sliced beets,salt coriander & pepper powders and mix well.  Simmer on low heat for approx 5 minutes stirring occasionally.
Serve as a side dish along with rice & sambhar
