There are days when I absolutely do not want to cook or rather get into the kitchen itself. My passion takes a backseat on these days and I end up cooking something just for the sake of it which in turn ends up in the refrigerator waiting to be thrown away.Abdul Kalam

Today was one such day and I decided to make a decent side dish what my daughter likes so that there are no left overs.
I made a simple gravy with soy granules which she loves. A simple but flavorful and healthy side dish for rotis.
Ingredients:
- ½ pack soy granules
- ½ cup finely chopped onion
- ½ cup finely chopped tomatoes
- 1 teaspoon ginger garlic paste
- 1½ teaspoon chilli powder
- ½ teaspoon turmeric powder
- ½ teaspoon cumin
- ½ teaspoon black pepper
- ½ teaspoon fennel/sombu
- 1 teaspoon coriander
- 1 teaspoon khus khus/poppy seeds
- 2 cloves
- 1 small piece cinnamon
Procedure:
- Prepare the granules according to the instruction on the packet and set aside.
- Heat oil in a kadai/pan, add chopped onions and sauté till the onions turn soft.
- Now add ginger garlic paste and sauté for another minute.
- Add chilli powder, turmeric powder.ground masala powder and salt and combine well.
- Immediately add the chopped tomatoes and sauté well for few minutes and simmer on low heat for about 5 minutes or until the tomatoes are soft and a nice masala forms.
- Stir in between. Now add the prepared granules and mix well.
- Add ½ cup of water and bring to a boil. Simmer on medium heat untill you get the desired consistency.
- Garnish with fresh coriander leaves and serve with rotis.
