 Keerai Kootu
I am not sure if there are that many varieties of greens available in any other part of India other than Tamilnadu. Different recipes are made using different greens. Kootu is one such recipe made with almost all varieties of Keerai, paruppu/dhal & coconut.
It is very difficult to find different varieties of keerai in Dallas, the few available are Spinach, Moringa leaves and Mulai Keerai.  There are few different varieties of Mulai Keerai/ Amaranth also called Cheera in Kerala, Thotakura in Andhra. The only variety available here is the red stripes in the center which gives the kootu the red color when cooked. Today`s recipe is a Chettinad Style kootu made with green gram, green chillies,cumin & coconut.
Ingredients:
  1. ½ cup pasi pauruppu/green gram
  2. 1 cup finely chopped Mulai keerai
  3. ½ teaspoon Mustard 
  4. ½ teaspoon ulluthamparuppu/urid dhal
  5. few curry leaves
  6. salt to taste
  7. 1tablespoon oil
To Grind:
  1.  ¼ cup grated coconut
  2. 2 green chillies
  3. 2 red chillies
  4. 1 teaspoon black pepper
  5. ½ teaspoon cumin
Procedure:
  1. Cook the paruppu in a pressure cooker.
  2. Grind to a fine paste the coconut along with the rest of the ingredients.
  3. Heat oil in a kadai/pan and add the mustard and when it splutters add the ulluntham paruppu and allow it to turn to a light brown color.
  4. Immediately add the cut keerai and mix well. Sprinkle some water and cover a lid and cook on low heat until the greens are cooked.
  5. Now add the cooked paruppu and coconut paste. Combine well and allow it to boil. Add salt and serve.

  7. I grow Amaranth during summer, they usually grow well in Spring and early summer. I occasionally see them in the grocery store. My mom and I make it almost the same way.
