Avocado Sundal/Salad
Sundal is the Southern Indian counterpart of Salad. A Sundal is a comination of spices with any type of beans or lentils.
A sundal/salad full of hearty ingredients like onions, tomatoes, avocados, and of course, beans is very versatile so you can add different spices and vegetables as the mood strikes! You can also experiment with different spices and beans in the recipe. Sundal can be served immediately or refrigerated overnight to allow flavors to combine and the vegetables to marinate.
I particularly love the balance in the sundal - the acidity of the tomatoes and lime with the sweetness of the onions, protein from the beans. It is a complete, light meal in itself.
Plenty of texture and plenty of flavors make this healthy sundal recipe a hit. It is so quick and easy you can have it on the table in less than ten minutes.

  1. 1 cup Garbanzo Beans/Chick Peas/Kadalai ~soaked overnight and cooked to one whistle in a pressure cooker.
  2. 1 Avocado cut into small pieces.
  3. ½ cup finely cut onions
  4. ½ cup finely cut tomatoes
  5. salt and pepper to taste
  6. Juice of half lime
  7. Fresh cut cilantro

  1. In a bowl mix in Garbanzo Beans/Chick Peas/Kadalai, Avocado, finely cut onions and tomatoes.
  2. Add salt and pepper to taste.
  3. Squeeze the juice of half lime
  4. Add fresh cut cilantro. Mix well.
Serve immediately or chilled.
