

Carrot Rice with mixed veg pachadi
Getting up late on a Saturday morning, the forecast showed heavier rain and breezy conditions. I was very lazy and wondering about what I should be making for lunch. I wanted to make something simple and easy, at the same time nutritious.
I was reminded of Amma making Carrot Rice. As kids, my sister and I were not big lovers of Carrots except Carrot Halwa. I think my Amma thought she has to somehow make us eat carrots and came thru the Carrot Rice recipe in some book.
I think she must have been very excited and in the process added too much carrots than the recipe demanded. To be very honest, it was just the poriyal mixed in rice. She then made some changes to the recipe and only when we liked it, she confessed that the first one was bad.
So when I grew up to be an Amma myself, I try to make Carrot Rice for my daughter . She has it without any complaints.

List of ingredients:
Set 1
- 2 cups Basmati Rice
- 3 carrots
- 1 cup finely chopped onions
- 4 green chillies
- 2 small cinnamon
- 4 cloves
- 3tbsp oil
- 2tsp salt
Set 2
- small piece cinnamon
- 2 cloves
- 2 tsp coriander seeds
- 2 tsp cumin
- 4 red chillies
- 4 tbsp grated coconut
For Garnishing:
Chopped Cilantro/Kothamalli
Cooking procedure:
- Heat a pan or kadai, Add a of oil and fry the ingredients in Set 2 in the order given. When cool dry grind to a coarse powder.
- Soak the rice for 3o minutes and cook the rice until 3/4 th done. keep aside and cool.
- Grate the carrot and keep aside.
- Heat up a pan or kadai and add the cinnamon and cloves . Fry the onion till brown and add the green chillies.
- Add the grated carrots and cook until the carrots are cooked.
- Now add the above mixture,salt and the powder to the rice. Mix well.
- Serve with any raita/pachadi
- Garnish with Cilantro.
